Now that the school year is coming to a close, the kids are going to be home and looking for food 24/7 this summer.
If you're trying to keep your snacks healthy, yet fun, we've got just the recipe for you!
Indulge in the taste of nostalgia with homemade Fruit Roll Ups. Perfectly sweet and bursting with organic fruit, this is sure to be a snack-time delight!
The best part is you only need one ingredient: 3 Cups of Organic Fruit
Today we selected a combination of Organic Watermelon and Organic Strawberries. In the past we have used Blackberries, Blueberries, Apples, Mangoes, etc.
Blend your chosen fruits in a high-speed blender until it resembles a pulp.
Pro Tip: If your pulp is too liquidy, strain out a bit of the juice into a cup and drink it, or pour it into popsicle molds and freeze it.
Next, take a sheet pan and lay a piece of parchment paper on the pan. For easy removal of the Fruit Roll Ups later, soak your sheet of parchment paper in a bowl of water for up to 30 seconds and then flatten it back out on your sheet pan. (Trust us - this step makes all the difference in the world)!
Now, pour your fruit pulp on the parchment paper and evenly distribute it so it is approximately an 1/8th of an inch thick. Use a spatula if necessary to make it even.
Bake this in the oven at a very low temperature (we used 170-200 degrees) for 4-6 hours, or until the top is no longer sticky and it is dry to the touch.
Use clean kitchen scissors to cut your fruit into strips and roll them up.
If your children do not devour them instantaneously, store them in an airtight container.
Enjoy!
