Apple Protein Breakfast Cookies!

It’s Make Something Monday!
Our family made these ‘Apple Protein Breakfast Cookies’ for a 4th of July camping trip and they were a huge hit!
Check out this simple, protein-rich recipe and fuel your family all week long!
Ingredients:
2 Medium Apples (washed and finely diced)
2 Teaspoons Cinnamon
1/8 Teaspoon Pink Salt
1 Tablespoon Honey
3 Scoops Organic Vegan Vanilla Pea Protein Powder
1 Cup Organic Gluten Free Oats
1 Cup Oat Flour (we just made our own in our Vitamix)
1/4 Cup Milk of Choice
1/2 Cup Organic Greek/Coconut Yogurt
Directions:
Cook your diced Apples, Cinnamon, Pink Salt and Honey in a skillet over medium-high heat until soft and your kitchen smells amazing!
In the interim, in a metal bowl, combine your Protein Powder, Oats, Oat Flour, Milk, and Greek Yogurt. Stir just until combined.
Once your Apples are soft, fold them into the other ingredients you had previously set aside.Â
If desired, you may add an additional squeeze of honey or pure maple syrup to taste. Mix well.
Divide batter into 12-15 Cookies, shape into flattened pieces, and bake at 350 degrees for 12 minutes, or until lightly browned.
