Cucumber Spinach Sandwiches!

It's almost the end of the week and the luster of the saga to find fun lunch ideas has most likely diminished since the beginning of the school year.

You want your kids to eat healthy, but you also want them to come home with an empty lunchbox at the end of the day. So, what is a parent to do?

Entice them with a 'Green Hulk Sandwich!'

These refreshing Cucumber Spinach Sandwiches taste great, but are also full of antioxidants, fiber and omega 3 fatty acids, which are all perfect for the brain-power our children (and we) need for the school day.

All you need to put these amazing sandwiches together is the following:

* 2 pieces of Sprouted Bread (we used Ezekiel bread)

* 1 small Avocado

* 1 small Cucumber, sliced

* A handful of Fresh Spinach Leaves

* 1 teaspoon of Dill

* Salt/Pepper to taste

Simply cut and spread the Avocado on your piece of bread.

Next, layer your Spinach leaves on the smashed Avocado.

Then, place your sliced Cucumbers on top of the Spinach leaves.

Lastly, season your creation with Dill, Salt, and Pepper.

Cover with your remaining slice of bread and tell your kids they will have as much strength as the Hulk!
