Gyros with Tzatziki Sauce!

It’s Meatless Monday! 


Whether you are pursuing more of a plant-based lifestyle due to health reasons, in support of the environment, or for budgetary purposes, you certainly can’t go wrong with cutting back on a carnivorous diet!


These Gyros with Tzatziki Sauce are an absolute must to add into your weekly meal rotation.


You probably already have most of the necessary ingredients in your house & can throw this together for dinner tonight. 


Ingredients:  1 (15 oz) can chickpeas or 1 ½ cup soaked chickpeas if starting from dry, drained and rinsed < 1 Tbsp olive oil  1 Tbsp paprika 1 tsp ground black pepper  1/2 tsp cayenne pepper  1/4 tsp salt (optional)

4 Pita Flat-breads 1 cup Tzatziki Sauce  1/4 red onion cut into strips 2 lettuce leaves roughly chopped 1 tomato                        The Tzatziki Sauce is:


1 Cup of Plain Dairy-Free Yogurt (or you can substitute Greek yogurt if not Vegan)

1 Cup of Finely Chopped Cucumbers

2 Tbsp Lemon Juice

2 Cloves of Garlic

1 Tbsp Dill (or more to taste)

A sprinkle of Pepper.  Preparation: Preheat oven to 400 degrees F. Pat dry chickpeas with paper towel, removing any skins that may come off. Gently toss chickpeas with oil, paprika, black pepper, cayenne pepper, and salt. Roast: Spread chickpeas onto a greased baking sheet and roast for about 20 minutes, until lightly browned, but not hard. Assemble: Spread some Tzatziki Sauce onto one side of the pita, then sprinkle in ¼ of the chickpeas and add veggies.


Fold in half and enjoy!
