National Pancake Day!

We almost missed National Pancake Day!


Whether you start off your day with the fluffy goodness of Pancakes, or use them as a fast dinner choice, you really can't go wrong.


Pancakes seem to be the one recipe that our whole family will agree on, at any given time.


Check out the simple recipe below that we use on a weekly basis and enjoy the versatility Pancakes have to offer!


Ingredients:


  • 1 tbsp. Chia seeds, ground (or ground flax seed)

  • 3 tbsp. Water

  • 1 cup Gluten-Free Oats

  • 1/2 cup vegan vanilla plant-protein powder

  • 1 cup Almond Milk

  • 1 tbsp. Coconut Oil

  • 1/2 tsp Baking Powder

  • 1/4 tsp Baking Soda

  • 1 tsp Cinnamon

  • 1 tsp Pure Vanilla

Instructions:


  • Add 1 tbsp. ground chia seeds to 3 tbsp. water and mix to combine. Let that mixture rest at least 5 minutes.

  • Then, in a blender, add your chia mixture, oats, protein powder, almond milk, coconut oil, baking powder, baking soda, cinnamon and vanilla. Blend until smooth.

  • Let rest 10-15 minutes before using, optional to add more almond milk if needed for thinning.

  • Next, bring a non-stick pan to medium heat with a dollop of coconut oil. When hot, cook pancakes for 2-3 minutes on each side until golden brown, and cooked through. Continue until you've used all of the batter.

  • Serve pancakes with fresh fruit, organic syrup, or toppings of your choice.
