Vegan Egg Nog
We are only a few days away from a brand new year and it’s always exciting to start fresh, with a clean slate!
As 2022 quickly approaches, I’m sure we can all agree that we want to show up as the absolute best version of ourselves.
That can start now with the choices we make, the habits we create, and the foods we eat.

1/2 cup raw cashews, (soaked at least 4 hours, rinsed)
2 cups Oat milk
2 Tablespoons pure maple syrup
1 vanilla bean, scraped (or 1 teaspoon pure vanilla extract)
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
A pinch of Pink Salt
Place all the ingredients in a high-speed blender. Blend on high for 2 minutes, or until smooth and creamy. Pour Egg Nog into a large container and refrigerate for at least 2 hours. Garnish, as desired.
(Makes approximately 4 servings. This Egg Nog stays best in a sealed container for up to 5 days. Alcohol can be added, if desired).
