It's Meatless Monday!

Meatless Monday is upon us again!


You don’t have to be a vegan or vegetarian to enjoy plant-based foods, but anyone can reap the benefits of a healthy gut-promoting diet, a lifestyle that lowers cholesterol, fights inflammation, and wards off numerous diseases.

Ingredients:

2 cans of beans (black, pinto, kidney, honestly whatever you have in your pantry will work), rained & rinsed

1 small can of tomato paste (or you can even add some salsa that you found in the fridge to kick things up a notch)

4-6 oz. of Gluten-Free Bread Crumbs

1 Tablespoon Organic Olive Oil

1 Tablespoon dried oregano

1 Teaspoon garlic powder

1 Tablespoon Chili Powder

Black Pepper, to taste

(Condiments such as: Fresh Basil, Pickles, Tomatoes, Mustard, Ketchup, etc.)


Instructions:

Preheat the oven to 400˚F.


In a high-speed blender, mix all of the ingredients together until thoroughly blended.


Take approximately 1/3 cup of the mixture and shape it into a patty using your hands. Repeat with the remaining mixture to create 6 total patties.


Place the patties on a parchment paper-lined baking sheet.


Bake for 10 minutes, flip, then bake for another 7-10 minutes.


Depending upon what type of beans you use, you may need to bake the burgers for a little longer (I found that pinto beans are a little squishy, so you may want to bake them longer to get a regular ‘burger consistency’).


Place the patties on large lettuce leaves and top with fresh basil, pickles, mustard, etc.
