Mexican Quinoa Skillet

It's Meatless Monday and this Mexican Quinoa Skillet dinner is a huge hit for the whole family! This is especially perfect for those nights where you don't have a lot of time (nor ingredients) and you don't want to wash a whole sink full of dishes! 
Simply add 1 1/2 cups of Quinoa, 2 cups of Vegetable Broth (or Water) and a can of diced tomatoes (do NOT drain the tomato juice) all into a large skillet.   Bring this mixture to a boil and reduce heat to simmer for 18-20 minutes, until the Quinoa pops open, absorbing the liquid. 
Then, stir in a can of drained Black Beans, (a can of corn - optional), a small handful of chopped Onions, and 1/2 of a fresh Lime (or at least 1 Tablespoon of Lime juice). 
Stir this together and add seasonings such as Garlic Powder, Black Pepper, Chili Powder, Cayenne Pepper, Turmeric and Cumin.  
Once your seasonings blend and most of the liquid is absorbed, serve immediately and top with optional items, such as Guacamole, Salsa and Cilantro.
