Looking at the AZ weather forecast might not indicate reprieve in our temperatures anytime soon, however, with the flip of a calendar page, I know Autumn is rapidly approaching and we could not be more excited!
My daughter & I adore anything associated with Pumpkin and we could not resist making this healthy homemade Pumpkin Spice Latte.
The great thing about this recipe is that you can either serve it straight off the hot stove-top, or pour it over ice, so if you need us, we’ll just be sitting over here enjoying the sunshine and sipping on our premature taste of Fall.
Ingredients:
2 Cups Almond Milk
2 Tablespoons Pumpkin Puree
1 Tablespoon Stevia (optional; can also use honey or agave)
1 Tablespoon Pure Vanilla
1/2 Teaspoon Pumpkin Pie Spice (plus more for garnish)
1/2 Cup - 1 Cup Brewed Strong Coffee
Instructions:
Add milk, pumpkin puree, and sugar to a saucepan over medium heat. Heat until hot, but do not boil. Remove the saucepan from the heat and whisk in the vanilla, pumpkin pie spice, and the coffee.
Divide the mixture between two mugs. Top with a sprinkle of pumpkin pie spice.
